Purple Sweet Potato Bread

Naturally purple bread. Is there anything better than that? 




It's been a while! I've been baking a little once in a while when I've got the time. I've spent a couple of days out with friends after exams, catching up with heart to heart talks and gossip with old friends that I haven't met in a while, and spending more time with my newer buddies. Every moment spent was a precious one, I'm thankful for all the people around me who have always been there every step of the way, especially my besties who never fail to cheer me up :) 



Anyway I've been wanting to get my hands on some purple sweet potato to make this bread. I must say that I like the taste and texture of golden, orange sweet potatoes better though, purple sweet potatoes tend to be a bit more dry than the other varieties. But that's a good thing in baking, because you get to add purple sweet potato as a dry ingredient without changing the texture of the final product too much! 



Purple Sweet Potato Bread 

150g steamed, peeled and mashed purple sweet potato
250g bread flour 
30g sugar 
1/4 tsp salt 
150g milk 
4g instant yeast (1 tsp) 
30g softened butter 

In a large bowl, combine the all the ingredients except the butter. 
Mix and knead until smooth and sticky. 
Add in the butter, and knead until the dough is smooth, very elastic, and passes the windowpane test. 
Let prove in a lightly greased bowl covered with plastic wrap for about an hour or until doubled in size. 
Punch the dough down and divide into 3 pieces. Cover with plastic wrap and let rest for about 10 minutes. 
Roll each piece of dough into a ball and then into a long oval the width of your baking pan. Roll up the oval into a log and pinch the ends close with your fingers. 
Place the 3 logs into a greased baking pan, cover lightly, and prove until doubled in size, about 45 minutes to one hour. 
Bake in a preheated 150 degrees oven for 35-40 minutes.

    1. Hi Michelle :) I do use a mixer. It takes about 15-20 minutes on my mixer on medium high speed, and about 30 minutes by hand, but it really depends! The best way is to check by stretching a piece of the dough as thinly as you can. The dough would also look smooth, shiny and elastic. Hope this helps!
