Lemon Poppy Seed Cornmeal Muffins

Love the crunch of the poppy seeds, and the lemon and cornmeal work really well together!!



You know there are some days when you just need to do something to cover up all the dread and lousy-ness you're feeling? Today's one of those days. I'm doing a physical fitness test tomorrow, a make up actually because I failed the first round. Yeah I failed. And no matter how many times I try to cheer myself up and say, yeah it's okay I'm not good at everything and I'm imperfect and life is never smooth sailing and we all fail, sometimes I just feel sad. And disappointed. And I feel like I've let myself down. 

At these times I really need something to perk me up. Like cake. Or muffins. I was doing some regular net surfing for recipe ideas after some failed sit-up practice and I saw this recipe. And I knew I had to make it. I just knew. I kind of just jumped up with my iPad in hand and stomped to the kitchen blasting some music and got to work (actually, fun). 



There's just something about cornmeal that I love. It's the sort of nuttiness and well, corny-ness (no pun intended hah). And because I just love corn. Especially on the cob slathered with salted butter. Love!!!! 

For me, baking is therapy. And books too, but baking first. I create a hella mess, but I'm kind of a messy girl. My room is in a mess- there are papers flying everywhere and sometimes I can't see the bed because it's all covered in paper. But somehow I can always seem to find my things when I need it haha. For me, the act of whisking and mixing and kneading and feeling the ingredients with my fingers is therapy. It's like closing your eyes and listening to the sound of crashing waves and the warm breeze is caressing your face. For me, baking is my favourite thing to do every single day. It's the thing I look forward to every week and something I could never, ever live without. 



Maybe my overload of baking therapy and too much eating has caused me to fail my physical fitness test. But oh well. To me, baking is worth it. 

Lemon Poppy Seed Cornmeal Muffins 
Makes 12-15 muffins 
Recipe adapted from The Clever Carrot 

1 1/2 cups all purpose flour 
1/2 cup fine cornmeal 
1 1/2 tsp baking powder 
1/2 tsp baking soda 
Pinch of salt 
1 tsp poppy seeds 
2 eggs 
1/3 cup oil 
3/4 cup buttermilk
2/3 cup sugar 
Juice and zest of 1 lemon 

Preheat oven to 180 degrees celsius. Line a 12 cup muffin tin with paper liners. 
In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, poppy seeds, and lemon zest. 
In a separate bowl, whisk together the eggs, oil, buttermilk, sugar, and lemon juice. 
Fold the wet ingredients into the dry, until just combined. 
Using an ice cream scoop or 2 spoons, divide the batter between the muffin liners. 
Bake for 15-20 minutes, until a toothpick inserted into the centre comes out clean.
