Flourless Cashew Butter Cookies
Chewy cookies with crisp edges, flourless and butter-less. Tastes exactly like a peanut butter cookie- but 10 times better.
Have you ever made cashew butter? Because you should. Like make it now. Empty your cupboards and go find the stash of old salted, roasted cashews and put them to good use. Cashew butter is amazing. It's sweet, salty and creamy- everything you could wish for in peanut butter.
This cookie is like magic. It's the easiest cookie I've made and it's also the best. Chewy centres, crisp edges, sweet, vanilla-y.
All you need to do is stir all the ingredients together, roll into balls, and place them on the baking sheet and bake. It's that simple! No mixer, and you really only need 5 minutes to mix everything together. Does it get any better?
Flourless Cashew Butter Cookies
Makes 2 dozen cookies
1 cup homemade cashew butter (or any nut butters, store bought or homemade)
1 cup raw granulated sugar
2 tsp vanilla
1 tsp baking soda
Preheat oven to 180 degrees celsius.
Mix all the ingredients together, roll into teaspoon sized balls, place on a baking sheet and bake for 8-10 minutes until golden brown.
Let cool completely before serving.
