Almond Butter Banana Bread
Secretly healthy, this protein packed banana bread is filled with mashed bananas, almond butter, chia seeds and greek yogurt! Perfect toasted for breakfast.
It's the holidays! Okay just for one week. A week of catching up on homework, revision, research and friends :) I look forward to spending some time with the friends I've missed, telling jokes and sharing stories and eating nice food. And exploring Singapore's hidden areas.
Sometimes I really really crave something sweet and tasty and delicious after school- more often than not that ends up being the jar of cookies someone kindly gifted. Which is basically butter and sugar laden and super high in calories. Which isn't a really bad thing except if I eat it every. Single. Day. So I've been devising new ideas- making tasty energy balls, veggies dipped in hummus, and afternoon pick-me-up smoothies. And knowing me, some healthy, easy, delicious baked goods (duh!).
So here's the banana bread that got me through a hell week. Snacking in the afternoons and doing homework with a cup of icy cold oj!!
Almond Butter Banana Bread
(Makes a large standard size loaf)
4 ripe bananas, peeled and mashed
1/3 cup Greek yogurt
1/4 cup almond butter (or any nut butter)
3 tbsp coconut oil
2 eggs
1 tsp vanilla
1/2 cup sugar
1 cup plain flour
1/2 cup wholewheat flour
3/4 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 1/2 tbsp chia seeds
1/4 walnuts, chopped (optional)
Preheat oven to 180 degrees Celsius.
Whisk together the mashed bananas, yogurt, almond butter, oil, egg, vanilla and sugar. Soft in the flours, baking soda, cinnamon and salt. Stir in the chia seeds and walnuts.
Pour into a greased and lined loaf tin. Bake for 45-50 min (if using a standard size tin) or 30-40 min (in two smaller tins), or till a skewer inserted into the centre comes out clean.
