Homemade Sausage Rolls

Homemade sweet pork sausage encased in a crisp, flaky puff pastry! A great weekday treat for this super busy week. 


This week is a terrible week. 

I have 2 tests tomorrow (3 if you count the online one) and another one on Friday. And I had one today. My file of worksheets is piling up nice and fat and it's only the 3rd week of school. 7 weeks before the holidays. 

So long more to go. 

I should be studying for my tests, but nothing beats biting into warm, buttery, crisp pastry and juicy, sweet pork. Which was exactly what I did today. 

This is the kind of snack you know you need to stop but you can't becasue it's just so good. And I gobbled two of these right out of the oven hehe the crumbs are everywhere on my worksheets now. 

At least that makes homework and tests a little more appetising. 


Homemade Sausage Rolls 
Makes 8 sausage rolls 

2 sheets frozen puff pastry, thawed
350g minced pork 
3 rashers of bacon, finely chopped 
5 Sundried tomatoes, finely chopped
1 tablespoon caramelised onion chutney 
1/4 tsp cayenne pepper 
1 tsp paprika 
1/2 tsp ground fennel 
1/2 tsp ground corriander 
1/2 tsp ground cumin 
1/4 tsp dried sage 
Sesame seeds, for garnish 
Salt and pepper 

Preheat oven to 200 degrees celsius. 
Combine all ingredients for the sausage together. 
Cut each sheet of puff pastry into 4 squares. 
Place 1-2 tablespoons of the sausage onto the centre of each square. 
Fold one end of the square to the other end, crimping the edge with a fork. 
Brush with egg wash and make 3 slits. 
Sprinkle with sesame seeds. 
Bake for 20-25 minutes until golden brown and crisp.
