3) It's soft, chewy, filled with chocolate.
Bonus: it's good for you.
These amazing bars contain Wholewheat flour, rolled oats and have no butter or oil. They are so easy to put together and even easier to eat.
I mean like who doesn't like peanut butter + oatmeal + chocolate?
I made this after a failed batch of baking. I think everyone needs something to cheer them up after bad days and failures and miserable food. This recipe will make you feel like you've conquered peanut butter land. It's that good.
Healthy Peanut Butter Oatmeal Bars
Makes 12-16 bars, for an 8x8 large brownie pan
Adapted from Sally's Baking Addiction
1/2 cup brown sugar
1 cup peanut butter
2 tsp vanilla
1 cup Wholewheat flour
1 cup old fashioned rolled oats
1 tsp baking soda
1/4 tsp salt
1/2 cup milk
1/2 cup cup chocolate chips
1/2 cup rasins/ nuts (or other add-ins)
Preheat oven to 180 degrees celsius.
Cream sugar, peanut butter and vanilla until light and fluffy.
Stir in flour, oats, baking powder and salt.
Slowly add in the milk, then stir in chocolate chips and raisins/ nuts.
Press the soft, sticky dough into the lined/ greased baking pan.
Bake for 17-20 minutes until lightly golden.
Cool completely before slicing.
These oatmeal peanut butter bars have crunchy oats, the crackly coconut, the nutty almonds and the magical combo of peanut butter and chocolate make each bar a hearty-healthy-delicious snack.
